From The Indianapolis Star, Friday, December 10, 1920: All public eating establishments must be spotless by Monday according to Dr. Herman Morgan, city sanitarian. At that time, a squad of inspectors will be set loose to investigate every eatery in Indianapolis and all violations will be vigorously prosecuted. The campaign is not only against unclean kitchens, but against vermin of every kind that thrive in such places. Dr. Morgan wants to eliminate the “private” sign over many kitchen entrances which leaves a broad interpretation, “stay out because if you see the way food is prepared you may not want to eat it.” The slogan of every food establishment should be, “Our kitchens is as clean as the room in which the food is being served.” Inspectors will visit every eating place each week to see if the laws are obeyed.
